You could also have a ball with croquetas. Prepare the white sauce a few days ahead, then use remaining pork, chicken, or foraged fungi for the interior. Whizz old bread into crumbs to cover them, then cook until crisp. Savoury pastry mixtures are another natural home for those breadcrumbs, or use them as a coating for bite-sized chicken. While you're at it, set aside some cranberry sauce and honey ham glaze in the refrigerator. When needed, thaw the meat, then place it in a hot oven with the saved glaze for a short time. Let it cool and slice thinly, then lay on top of some artisan bread and start building mini sandwiches with lots of tangy sauce. Cut into small squares for a surefire hit.

Pull the meat, then fry it slowly in a pan, and mix with remaining sauce loosened with citrus juice, a dash of soy sauce and a little spicy oil. Finish with fresh herbs and some sliced spring onion, and present in small lettuce cups.

Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Mix all your remaining vegetables with herbs, then season and incorporate a binding agent. Stamp out portions to roughly the size of blinis, then store in the icebox. Reheat in a hot oven for a short time and finish with whatever you like—perhaps sliced beef and sharp horseradish. A good tip, though: save a stash for a late breakfast the next day.
